Ingredients

1 ½ cups graham cracker crumbs

½ cup melted butter

¼ cup granulated sugar (for crust)

16 oz cream cheese, softened

½ cup granulated sugar (for filling)

2 large eggs

1 teaspoon vanilla extract

1 ½ cups chopped fresh strawberries

½ cup strawberry jam

¾ cup all-purpose flour

¼ cup brown sugar

¼ cup granulated sugar (for topping)

½ cup cold butter, cubed


Instructions

1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.

2. In a bowl, mix graham cracker crumbs, melted butter, and ¼ cup granulated sugar. Press firmly into the dish. Bake for 8–10 minutes. Let cool.

3. In another bowl, beat cream cheese until smooth. Add ½ cup sugar, eggs, and vanilla. Mix until creamy. Pour over cooled crust.

4. In a separate bowl, mix strawberries and strawberry jam. Spread evenly over the cheesecake layer.

5. For the topping, combine flour, brown sugar, ¼ cup granulated sugar, and cold butter. Use a pastry cutter or fork until crumbly. Sprinkle over the strawberry layer.

6. Bake for 35–40 minutes until the top is golden and center is set.

7. Cool on a wire rack, then refrigerate at least 2 hours before slicing.

Notes

For the best clean slices, chill thoroughly and use a sharp knife dipped in warm water.

Swap the graham crust with crushed vanilla wafers for a different twist.

Let bars sit at room temp for 10 minutes before serving for ideal texture.
