Ingredients
4 slices thick-cut brioche or Texas toast
4 oz cream cheese, softened
2 tablespoons powdered sugar
1 teaspoon vanilla extract
1 cup fresh strawberries, sliced
2 large eggs
1/4 cup milk or half-and-half
1 tablespoon butter (for cooking)
Optional: powdered sugar, maple syrup, and extra strawberries for serving
Instructions
1. In a bowl, beat the cream cheese with powdered sugar and vanilla extract until fluffy and smooth.
2. Slice a pocket into each piece of brioche or Texas toast without cutting all the way through.
3. Fill each slice with 2 tablespoons of cheesecake mixture and a layer of sliced strawberries.
4. In a shallow dish, whisk together eggs and milk until well combined.
5. Carefully dip each stuffed slice into the egg mixture, coating both sides evenly.
6. Heat a skillet or griddle over medium heat and melt the butter.
7. Cook each slice for 3–4 minutes per side, or until golden brown and crisp.
8. Serve warm with a dusting of powdered sugar, maple syrup, and additional fresh strawberries.
Notes
For best results, use day-old brioche—it absorbs the custard better without falling apart.
Don’t overfill the toast or the cheesecake filling may leak during cooking.
Reheat leftovers in a skillet to maintain a crispy exterior—avoid microwaving.
