Ingredients

1 and 1/4 cups all-purpose flour

1 and 1/2 teaspoons baking powder

1/4 teaspoon salt

1/2 cup granulated sugar

1/2 cup whole milk

1/4 cup unsalted butter, melted

1 large egg

1 teaspoon vanilla extract

4 ounces cream cheese (softened)

1 cup powdered sugar

1/2 cup diced fresh strawberries

2 tablespoons pink sugar crystals (optional)


Instructions

1. In a large bowl, whisk together flour, baking powder, salt, and sugar until combined.

2. In a separate bowl, whisk milk, melted butter, egg, and vanilla until smooth.

3. Pour wet ingredients into dry and mix until just combined. Do not overmix.

4. Spoon batter into a piping bag and pipe into a greased donut pan, filling each cavity 3/4 full.

5. Bake at 350°F (175°C) for 10–12 minutes until lightly golden and springy.

6. Cool in pan for 5 minutes, then transfer to a wire rack.

7. Beat cream cheese and powdered sugar until smooth. Add a splash of milk if needed to thin.

8. Once donuts are cool, glaze and top with diced strawberries and pink sugar crystals while glaze is wet.

Notes

Make sure the donuts are completely cool before glazing for best results.

Use room temperature cream cheese for a smoother glaze.

For a tangier bite, mix a little lemon zest into the glaze.
