Description

This Strawberry Cheesecake Crunch is a no-bake layered dessert inspired by the nostalgic ice cream bars we loved as kids. It features silky cheesecake layers, juicy fresh strawberries, soft vanilla cake, and a sweet strawberry crunch topping that delivers the perfect finish. Make it for birthdays, summer BBQs, or just because!


Ingredients

36 Golden Oreos, crushed (about 3 cups)

1 cup freeze-dried strawberries

1/2 cup unsalted butter, melted

16 oz cream cheese, softened

3/4 cup granulated sugar

1 1/2 cups heavy whipping cream

2 teaspoons vanilla extract

1 1/2 cups fresh strawberries, sliced

3 tablespoons strawberry gelatin powder

2 layers vanilla cake, pre-baked or store-bought


Instructions

1. Crush the Golden Oreos using a food processor. Set aside half for the topping.

2. Combine the remaining crushed Oreos with melted butter. Press into a springform pan to form the crust. Chill in the fridge.

3. Beat cream cheese and sugar until smooth. In a separate bowl, whip heavy cream until stiff peaks form.

4. Gently fold whipped cream into the cream cheese mixture with vanilla extract.

5. Divide the mixture in half. Mix the strawberry gelatin powder into one half to create a pink layer.

6. Spread a layer of plain cheesecake over the crust, add a layer of vanilla cake, and scatter sliced strawberries.

7. Add the pink strawberry cheesecake layer, top with the second cake layer, and finish with the remaining plain cheesecake mixture.

8. Make the crumble by pulsing reserved Golden Oreo crumbs with freeze-dried strawberries and a little melted butter.

9. Sprinkle the strawberry crunch generously over the top.

10. Refrigerate for at least 4 hours, preferably overnight, before serving.

Notes

Chill overnight for the best firm texture and flavor development.

Dip a knife in warm water before slicing for clean, bakery-style cuts.

If using fresh cake layers, make sure they’re fully cooled before layering to avoid melting the cheesecake filling.
