Description

Stick of Butter Chicken Rice is the definition of comfort food—tender chicken baked over buttery, seasoned rice and rich cream of chicken soup. It’s a simple, no-fuss one-dish meal that delivers maximum flavor with minimal effort.


Ingredients

1 cup long grain white rice (uncooked)

1 (10.5 oz) can cream of chicken soup

1 3/4 cups chicken broth

1/2 teaspoon onion powder

1/2 teaspoon garlic powder

Salt and pepper, to taste

4 boneless, skinless chicken thighs or breasts

1/2 cup (1 stick) unsalted butter, sliced into pats

Fresh parsley (optional, for garnish)


Instructions

  1. Preheat oven to 350°F and grease a 9×13-inch baking dish.
  2. Spread uncooked rice evenly in the baking dish.
  3. Add cream of chicken soup and chicken broth. Stir to combine.
  4. Sprinkle in onion powder, garlic powder, salt, and pepper.
  5. Place chicken on top of the rice mixture.
  6. Arrange butter pats over the chicken.
  7. Cover tightly with foil and bake for 45 minutes.
  8. Remove foil and bake an additional 15–20 minutes until chicken is fully cooked and rice is tender.
  9. Let rest 5 minutes before serving. Garnish with parsley if desired.
