Ingredients
1 cup long grain white rice (uncooked)
1 (10.5 oz) can cream of chicken soup
1 3/4 cups chicken broth
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
Salt and pepper, to taste
4 boneless, skinless chicken thighs or breasts
1/2 cup (1 stick) unsalted butter, sliced into pats
Fresh parsley (optional, for garnish)
Instructions
- Preheat oven to 350°F and grease a 9×13-inch baking dish.
- Spread uncooked rice evenly in the baking dish.
- Add cream of chicken soup and chicken broth. Stir to combine.
- Sprinkle in onion powder, garlic powder, salt, and pepper.
- Place chicken on top of the rice mixture.
- Arrange butter pats over the chicken.
- Cover tightly with foil and bake for 45 minutes.
- Remove foil and bake an additional 15–20 minutes until chicken is fully cooked and rice is tender.
- Let rest 5 minutes before serving. Garnish with parsley if desired.
