Ingredients
8 oz lo mein noodles or egg noodles
1/2 lb flank or sirloin steak, thinly sliced
1/2 lb shrimp, peeled and deveined
2 tablespoons low-sodium soy sauce
1 tablespoon oyster sauce
1 tablespoon brown sugar
1 teaspoon sesame oil
1 tablespoon vegetable oil
1 red bell pepper, sliced
1 yellow bell pepper, sliced
2 green onions, chopped
1 cup fresh spinach
2 cloves garlic, minced
1 teaspoon fresh ginger, grated
1 teaspoon cornstarch (optional, for thickening)
Instructions
1. Slice the steak thinly against the grain. Clean and devein shrimp. Chop all vegetables. Boil noodles as per package directions, drain, and rinse with cold water.
2. In a bowl, marinate the steak with 1 tablespoon soy sauce, 1 teaspoon cornstarch, garlic, and ginger. Let sit for 10 minutes.
3. Heat vegetable oil in a wok over high heat. Sear the steak until browned and just cooked through. Remove and set aside.
4. In the same wok, cook the shrimp until pink and opaque. Remove and set aside.
5. Add a little more oil if needed. Stir-fry bell peppers and onions for 2-3 minutes. Add minced garlic and stir for 30 seconds.
6. Return steak and shrimp to the wok. Add cooked noodles. Pour in a mixture of 1 tablespoon soy sauce, oyster sauce, brown sugar, and sesame oil. Toss to combine.
7. Add spinach and green onions. Stir until spinach wilts. Serve immediately while hot.
Notes
Marinating the steak for even 10 minutes enhances tenderness and flavor.
Use cold water to rinse noodles after cooking to prevent sticking.
Stir-fry on high heat for the best texture and flavor in veggies and meat.
