Description
A bold and creamy comfort dish featuring tender seared steak bites paired with cheesy rotini pasta in a luscious garlic parmesan sauce. Ideal for a cozy dinner or an impressive plate for guests.
Ingredients
1 lb sirloin steak or ribeye, cut into bite-sized cubes
12 oz rotini pasta
1 cup heavy cream
1 cup parmesan cheese, freshly grated
4 cloves garlic, minced
2 tbsp butter
1 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1/4 tsp red pepper flakes (optional)
2 tbsp fresh parsley, chopped
Instructions
1. Cut the steak into bite-sized cubes and pat dry. Season with salt and black pepper on all sides.
2. Bring a large pot of salted water to a boil. Cook rotini until al dente. Reserve 1/2 cup pasta water, then drain.
3. Heat butter and olive oil in a cast iron skillet over medium-high heat. Sear steak bites in batches for 2–3 minutes per side until browned. Set aside.
4. In the same skillet, reduce heat to medium. Add minced garlic and sauté for 30 seconds until fragrant.
5. Pour in heavy cream and whisk gently. Simmer for 2–3 minutes.
6. Stir in parmesan cheese until smooth. Add pasta water as needed to adjust consistency.
7. Add rotini to the sauce and toss well. Fold in steak bites and heat through.
8. Garnish with chopped parsley, optional red pepper flakes, and more parmesan. Serve immediately.

Patting the steak dry ensures a crisp, caramelized sear.
Reserve pasta water before draining—it’s perfect for adjusting the sauce consistency.
Freshly grated parmesan melts more smoothly than pre-shredded versions.
