  • Yield: 40 sausage balls

Description

These Spicy Rotel Sausage Balls with Cream Cheese are the ultimate party appetizer—spicy, cheesy, and incredibly easy to make. Perfect for game day, holidays, or a snacky weekend, they deliver bold flavor in every bite.

Ingredients

1 pound spicy breakfast sausage

1 cup Rotel diced tomatoes with green chilies drained

8 ounces cream cheese softened

2 cups shredded cheddar cheese

1 ½ cups baking mix like Bisquick

Instructions

1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone mat.

2. In a large bowl, combine sausage, cream cheese, cheddar cheese, drained Rotel, and baking mix. Mix until fully combined.

3. Scoop into 1-inch balls and roll until smooth.

4. Arrange on the baking sheet, leaving space between each.

5. Bake for 20-25 minutes or until golden brown and cooked through.

6. Let cool slightly before serving.

Notes

Drain the Rotel well to avoid a soggy mixture.

Use a cookie scoop for even-sized balls and consistent baking.

For extra heat, add diced jalapeños or cayenne pepper to the mix.
