Ingredients
1 ½ cups cooked shredded chicken
2–3 jalapeños, chopped (adjust to taste)
8 oz cream cheese
1 cup shredded cheddar cheese
4 cups chicken broth
¾ cup heavy cream
3 cloves garlic, minced
¼ cup chopped green onions (plus more for garnish)
1 tsp ground cumin
½ tsp smoked paprika
Salt and pepper to taste
2 tbsp butter
Instructions
1. Melt butter in a large Dutch oven over medium heat. Add garlic and chopped jalapeños, sauté for 2–3 minutes until soft and fragrant.
2. Stir in cumin, smoked paprika, salt, and pepper to evenly coat the aromatics.
3. Pour in chicken broth, scraping the bottom to release browned bits. Bring to a gentle simmer.
4. Lower heat and add cream cheese, whisking until smooth and fully incorporated.
5. Stir in heavy cream, then add shredded chicken and cheddar cheese. Simmer until melted and creamy.
6. Taste and adjust seasoning if needed. Ladle into bowls, garnish with green onions, extra jalapeños, bacon, or more cheese.
Notes
Use gloves when handling jalapeños to avoid skin irritation.
