Spicy Garlic Parmesan Lentil Pasta is the perfect blend of creamy comfort and bold flavor. Packed with plant-based protein from lentil pasta and infused with rich garlic, parmesan, and just the right kick of heat, this quick dinner is both nutritious and indulgent.
Ingredients
8 oz lentil rotini pasta
4 cloves garlic, minced
¾ cup grated parmesan cheese
½ cup heavy cream or coconut cream
2 tablespoons olive oil
½ teaspoon crushed red pepper flakes (adjust to taste)
2 tablespoons chopped fresh parsley
½ teaspoon salt
¼ teaspoon black pepper
½ cup reserved pasta water
Instructions
1. Bring a large pot of salted water to a boil. Cook lentil pasta until al dente. Reserve ½ cup of pasta water, then drain and set pasta aside.
2. In a skillet over medium heat, heat olive oil. Add minced garlic and sauté for 1–2 minutes until fragrant. Add red pepper flakes.
3. Lower the heat and pour in the cream. Stir, then slowly add the parmesan cheese. Mix until the sauce becomes creamy and smooth.
4. Add the cooked pasta to the skillet. Toss to coat. Add pasta water a splash at a time if sauce needs thinning.
5. Season with salt and pepper. Garnish with chopped parsley and extra parmesan. Serve immediately.
Notes
Lentil pasta foams more than regular pasta—watch it closely while boiling.
Use freshly grated parmesan for the smoothest sauce.
Add more red pepper flakes if you want extra heat.
