Description

Ingredients

4 boneless skinless chicken thighs

1 cup buttermilk

2 tablespoons hot sauce

1 cup all-purpose flour

1/4 cup cornstarch

1 teaspoon paprika

1 teaspoon garlic powder

1/2 teaspoon cayenne pepper

1 teaspoon salt

1/2 teaspoon black pepper

Oil for frying (vegetable, canola, or peanut)

1/2 cup mayonnaise

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

1 tablespoon hot sauce

2 teaspoons lemon juice or vinegar

4 brioche buns

1 cup shredded lettuce

12 pickle slices


Instructions

1. In a bowl, whisk together buttermilk and hot sauce. Add chicken thighs, cover, and marinate in the fridge for at least 1 hour or overnight.

2. In a separate bowl, mix flour, cornstarch, paprika, garlic powder, cayenne, salt, and pepper.

3. Heat oil in a deep fryer or skillet to 350°F (175°C). Remove chicken from marinade, dredge thoroughly in flour mixture. Fry each piece until golden brown and internal temp reaches 165°F. Transfer to wire rack to drain.

4. Whisk together mayonnaise, smoked paprika, garlic powder, hot sauce, and lemon juice. Taste and adjust seasoning.

5. Toast the brioche buns. Spread a generous layer of sauce on the bottom bun, then layer fried chicken, pickles, shredded lettuce, and top with more sauce. Close with the top bun and serve immediately.

Notes

Use a wire rack after frying to keep chicken crispy and prevent sogginess.

For extra heat, add a pinch of cayenne or a dash of hot honey to the finished sandwich.

Don’t skip marinating — it’s the key to tender, flavorful chicken.
