Ingredients
1 lb chicken breast or thigh chunks
8 oz linguine
4 cloves garlic, minced
4 tbsp unsalted butter
1 tbsp olive oil
1 tsp red pepper flakes
1 tsp Cajun seasoning
1 tsp salt
1 tsp cracked black pepper
1 cup heavy cream
1 cup parmesan cheese, shredded
1 cup mozzarella cheese, shredded
1/2 cup fontina cheese, shredded
1/2 cup cream cheese
1 tbsp fresh parsley (optional)
Instructions
1. Toss chicken in olive oil, Cajun seasoning, salt, and pepper. Sear in a hot skillet until golden brown. Remove and set aside.
2. Boil linguine in salted water until al dente. Reserve 1/2 cup pasta water and drain.
3. In the same skillet, melt butter and sauté garlic until fragrant.
4. Pour in heavy cream and bring to a simmer. Stir in cheeses until fully melted and smooth. Add pasta water as needed.
5. Add linguine to sauce and toss to coat. Return chicken to the skillet and stir through. Garnish with parsley and extra red pepper flakes if desired.
Notes
Use freshly shredded cheese for a smoother sauce—pre-shredded varieties may clump.
Control heat by adjusting the red pepper flakes to taste.
