This bold and creamy Spicy Cajun Chicken with Garlic Parmesan Linguine blends tender blackened chicken breasts with rich, garlicky Parmesan linguine. A one-skillet stunner perfect for weeknights or impressive dinner guests—full of heat, comfort, and flavor in every bite.
Ingredients
1 lb chicken breasts
2 tbsp Cajun seasoning
8 oz linguine pasta
3 cloves garlic, minced
1 cup heavy cream
1 cup Parmesan cheese, freshly grated
2 tbsp butter
1 tbsp olive oil
Salt and pepper, to taste
1 tbsp fresh parsley, chopped (optional)
Instructions
1. Season the chicken breasts on both sides with Cajun seasoning.
2. Heat olive oil in a cast iron skillet over medium-high. Sear chicken 4–5 minutes per side until golden and fully cooked. Remove and let rest.
3. In a large pot, boil linguine in salted water until al dente. Reserve ½ cup of pasta water before draining.
4. In the same skillet, melt butter. Add garlic and sauté until fragrant.
5. Pour in heavy cream, whisking until smooth. Stir in Parmesan until melted and creamy.
6. Add a splash of reserved pasta water if needed to thin the sauce.
7. Toss drained pasta into the sauce to coat.
8. Slice the rested chicken and place on top of the pasta. Garnish with parsley if desired.
Notes
Use freshly grated Parmesan for a smoother, melt-in sauce—pre-grated doesn’t melt as well.
Let the chicken rest after cooking to retain its juices.
For a lighter version, substitute half-and-half for heavy cream (but expect less richness).
