Spicy Buffalo Garlic Chicken Bites with Creamy Ranch Cajun Alfredo Pasta

Description

Spicy, creamy, and comforting all in one plate—these buffalo garlic chicken bites are pan-seared to perfection and paired with rich Cajun Alfredo pasta swirled with ranch. It’s a bold dinner packed with flavor and just the right amount of heat.


Ingredients

1 lb chicken breast, boneless and skinless

2 tablespoons olive oil

3 cloves garlic, minced

1/3 cup buffalo sauce

Salt and pepper to taste

1 tablespoon Cajun seasoning

8 oz rotini or fusilli pasta

1 cup heavy cream

1/2 cup ranch dressing

1/2 cup grated Parmesan cheese

1 tablespoon Cajun seasoning

1 cup celery sticks

1 tablespoon chopped fresh parsley (optional)


Instructions

1. Dice the chicken breasts into bite-sized pieces and season with salt, pepper, garlic, and Cajun seasoning.

2. In a large non-stick skillet, heat olive oil over medium-high heat. Sear the chicken until golden and fully cooked, about 5–7 minutes.

3. Toss the cooked chicken bites in buffalo sauce in a mixing bowl until evenly coated. Set aside.

4. Cook pasta according to package instructions until al dente. Drain and set aside.

5. In a medium saucepan, heat heavy cream over medium heat. Stir in Cajun seasoning, ranch dressing, and Parmesan cheese. Simmer until the sauce thickens.

6. Add cooked pasta to the sauce and stir to coat evenly.

7. Plate the creamy Alfredo pasta and top with buffalo chicken bites. Garnish with chopped parsley and serve with celery sticks on the side.

Notes

Use freshly grated Parmesan for the creamiest Alfredo texture.

For less heat, reduce the amount of buffalo sauce or mix with a spoonful of honey.

Add spinach or roasted red peppers to the Alfredo for a veggie-packed variation.
