Southwest Grilled Chicken Wraps

Description

These wraps are loaded with juicy grilled chicken, crisp bell peppers, fresh greens, and a zesty Southwest sauce—all wrapped up in a soft tortilla. They’re perfect for busy weeknights or meal prep lunches.


Ingredients

2 boneless, skinless chicken breasts

1 tablespoon olive oil

1 tablespoon Southwest seasoning (or taco seasoning)

Juice of 1 lime

1 red bell pepper, diced

1 yellow bell pepper, diced

1 green bell pepper, diced

½ red onion, diced

1 cup romaine lettuce or mixed greens

¼ cup chopped fresh cilantro (optional)

4 large flour tortillas

¼ cup creamy Southwest sauce or chipotle mayo


Instructions

  1. In a bowl or zip-top bag, combine chicken, olive oil, Southwest seasoning, and lime juice. Marinate for at least 30 minutes.
  2. Preheat grill or grill pan to medium-high heat. Grill chicken 5-7 minutes per side until fully cooked. Let rest, then slice into strips.
  3. While chicken cooks, prep veggies and warm the tortillas.
  4. Lay out tortillas and layer lettuce, peppers, onion, cilantro, and grilled chicken.
  5. Drizzle with Southwest sauce. Fold in sides, roll up tightly, and slice in half to serve.
