Description
These wraps are loaded with juicy grilled chicken, crisp bell peppers, fresh greens, and a zesty Southwest sauce—all wrapped up in a soft tortilla. They’re perfect for busy weeknights or meal prep lunches.
Ingredients
2 boneless, skinless chicken breasts
1 tablespoon olive oil
1 tablespoon Southwest seasoning (or taco seasoning)
Juice of 1 lime
1 red bell pepper, diced
1 yellow bell pepper, diced
1 green bell pepper, diced
½ red onion, diced
1 cup romaine lettuce or mixed greens
¼ cup chopped fresh cilantro (optional)
4 large flour tortillas
¼ cup creamy Southwest sauce or chipotle mayo
Instructions
- In a bowl or zip-top bag, combine chicken, olive oil, Southwest seasoning, and lime juice. Marinate for at least 30 minutes.
- Preheat grill or grill pan to medium-high heat. Grill chicken 5-7 minutes per side until fully cooked. Let rest, then slice into strips.
- While chicken cooks, prep veggies and warm the tortillas.
- Lay out tortillas and layer lettuce, peppers, onion, cilantro, and grilled chicken.
- Drizzle with Southwest sauce. Fold in sides, roll up tightly, and slice in half to serve.
