Ingredients
2 chicken breasts, boneless and skinless
1 tablespoon smoked paprika
2 tablespoons olive oil
1 cup heavy cream
1 cup grated Parmesan cheese
3 tablespoons butter
3 cloves garlic, minced
1/2 cup feta cheese
1 lemon, zest and juice
8 ounces fresh green beans, trimmed
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. Pat chicken breasts dry, cut into bite-sized chunks, and toss with olive oil, smoked paprika, salt, and pepper.
2. Sear chicken in a hot cast iron skillet or grill pan until charred and cooked through, about 6–8 minutes.
3. In a medium saucepan, melt butter over medium heat. Add minced garlic and sauté until fragrant, then pour in heavy cream.
4. Simmer sauce until slightly thickened, then whisk in Parmesan until smooth.
5. In a mixing bowl, combine feta, lemon zest, lemon juice, and a drizzle of olive oil. Beat with a hand mixer until creamy and fluffy.
6. In the same skillet, cook green beans over medium-high heat with olive oil until tender-crisp with char marks.
