Ingredients
2 pounds boneless skinless chicken breasts or thighs
¾ cup low-sodium soy sauce
⅓ cup honey
2 tablespoons rice vinegar
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
2 tablespoons cornstarch
2 tablespoons water (for slurry)
3 cups broccoli florets
1 tablespoon sesame seeds
2 tablespoons green onions, chopped
Instructions
1. Trim and cut chicken into bite-sized pieces. Place in the slow cooker.
2. In a bowl, whisk together soy sauce, honey, rice vinegar, garlic, and ginger. Pour over chicken.
3. Cover and cook on low for 4–5 hours or on high for 2–3 hours.
4. Mix cornstarch with water to form a slurry. Stir into the slow cooker and cook on high for 15–20 minutes until thickened.
5. Add broccoli florets in the last 20 minutes of cooking.
6. Serve over cooked rice, and garnish with sesame seeds and green onions.
Notes
For a low-carb option, serve over cauliflower rice or steamed greens.
