Description
A comforting, slow-cooked casserole layered with seasoned steak, tender potatoes, creamy sauce, and gooey cheddar cheese. Perfect for busy weeknights or cozy weekends.
Ingredients
1.5 lbs steak (sirloin or chuck), cut into cubes
5 medium Russet or Yukon Gold potatoes, sliced
2 cups shredded sharp cheddar cheese
1 can (10.5 oz) cream of mushroom soup
1 cup sour cream
1/2 cup beef broth
1 medium onion, chopped
3 cloves garlic, minced
2 tbsp butter
1 tsp paprika
Salt and pepper, to taste
1/2 tsp dried thyme
Cooking spray or additional butter for greasing
Instructions
- Season steak with salt, pepper, and paprika. Sear in batches in a hot skillet until browned.
- In the same skillet, melt butter and sauté onion and garlic until fragrant.
- Grease the slow cooker. Layer potatoes, steak, sautéed onions, and some cheese. Repeat until ingredients are used.
- In a bowl, mix cream of mushroom soup, sour cream, and beef broth. Pour over the layers.
- Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours, until potatoes are tender.
- In the final 15 minutes, top with remaining cheese, cover, and let it melt.
