This Slow Cooker Sausage Lentil Soup is a cozy, protein-packed comfort meal made with hearty lentils, savory Italian sausage, and vegetables simmered to perfection in a rich broth. It’s a flavorful, fuss-free option ideal for cold nights, meal prep, and family dinners.
Ingredients
1 pound Italian sausage (mild or spicy)
1 1/2 cups dry green or brown lentils
3 carrots, diced
2 celery stalks, diced
1 yellow onion, diced
3 garlic cloves, minced
1 can (14.5 oz) diced tomatoes
2 tablespoons tomato paste
6 cups chicken broth
1 tablespoon Italian seasoning
1 teaspoon salt (adjust to taste)
1/2 teaspoon black pepper (adjust to taste)
Instructions
1. Brown the sausage in a large skillet over medium heat until fully cooked. Drain excess grease.
2. While sausage cooks, chop the carrots, celery, onion, and garlic.
3. Add the sausage, vegetables, lentils, diced tomatoes, tomato paste, chicken broth, Italian seasoning, salt, and pepper to the slow cooker.
4. Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours until lentils are tender.
5. Stir the soup and adjust seasoning if needed before serving.
Notes
For added greens, stir in chopped spinach or kale during the last 30 minutes of cooking.
Red lentils are not recommended here—they’ll break down and make the soup mushy.
Store leftovers in airtight containers for up to 5 days in the fridge or 3 months in the freezer.
