Ingredients
2 pounds kielbasa sausage, sliced
1 small head green cabbage, chopped
1.5 pounds Yukon Gold potatoes, cubed
3 carrots, chopped
1 medium yellow onion, diced
3 cloves garlic, minced
3 cups chicken broth
1 teaspoon salt
0.5 teaspoon black pepper
1 bay leaf (optional)
2 tablespoons fresh parsley, chopped (for garnish)
Instructions
1. Chop the kielbasa into 1-inch slices. Cube the potatoes, chop the carrots and cabbage, and dice the onion. Mince the garlic finely.
2. Layer the potatoes and carrots in the bottom of a 6-quart slow cooker. Add the onion and cabbage on top, then the sliced kielbasa.
3. Sprinkle salt, pepper, and minced garlic evenly over the ingredients. Add bay leaf if using. Pour in chicken broth to just cover the contents.
4. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until potatoes are tender and cabbage is soft but not mushy.
5. Remove bay leaf, stir gently, garnish with fresh parsley, and serve warm.
Notes
For extra flavor, sear the kielbasa slices in a skillet before adding them to the slow cooker.
To reduce sodium, use low-sodium chicken broth and check sausage labels.
Add a splash of apple cider vinegar before serving to brighten the flavors.
