Sweet, tangy, and tropical in every bite, this Slow Cooker Hawaiian Chicken is the ultimate set-it-and-forget-it dinner. Tender chicken thighs are slow-cooked in a savory pineapple-soy sauce, making it perfect to serve over rice or with roasted potatoes.


Ingredients

2 lbs boneless, skinless chicken thighs

1 (20 oz) can pineapple chunks, juice reserved

1/3 cup soy sauce

1/4 cup brown sugar

2 tablespoons tomato paste

2 cloves garlic, minced

1 teaspoon grated fresh ginger (or 1/2 tsp ground ginger)

1 tablespoon cornstarch (optional)

2 tablespoons cold water (for cornstarch slurry)

1/2 cup chopped bell peppers (optional)

1 cup diced potatoes (optional)

Fresh chopped green onions or herbs (for garnish)


Instructions

Season chicken thighs with salt and pepper. Optional: Sear in a skillet until golden on both sides.

In a bowl, whisk together pineapple juice, soy sauce, brown sugar, tomato paste, garlic, and ginger.

Place chicken in slow cooker. Add pineapple chunks, bell peppers, and potatoes if using.

Pour sauce over the chicken. Cover and cook on low for 5-6 hours or high for 3-4 hours.

(Optional) Mix cornstarch with cold water and stir into the slow cooker during the last 30 minutes to thicken the sauce.

Garnish with fresh herbs or green onions and serve hot.
