1 pound boneless skinless chicken breasts

1 can (4 oz) diced green chiles

1 medium yellow onion, chopped

3 cloves garlic, minced

4 cups chicken broth

1 teaspoon ground cumin

1 teaspoon chili powder

1 teaspoon salt

½ teaspoon black pepper

¼ cup fresh cilantro, chopped (optional)

1 tablespoon lime juice (optional)

1 cup tortilla strips or crushed tortilla chips (for topping)


Instructions

1. Add chicken breasts, black beans, corn, fire-roasted tomatoes, green chiles, onion, garlic, cumin, chili powder, salt, and pepper into the slow cooker.

2. Pour the chicken broth over everything and gently stir to combine.

3. Cover and cook on low for 6–7 hours or on high for 3–4 hours until chicken is cooked through and tender.

4. Shred the chicken directly in the slow cooker using two forks or tongs. Stir the shredded chicken back into the soup.

5. Ladle into bowls and top with tortilla strips, fresh cilantro, lime juice, or your favorite toppings like avocado, sour cream, or cheese.
