Ingredients
1.5 lbs boneless skinless chicken thighs

8 oz baby bella mushrooms, sliced
2 cloves garlic, minced
0.75 cup Marsala wine
0.5 cup chicken broth
0.5 cup heavy cream
1 tablespoon cornstarch (optional, for thickening)
2 tablespoons water (if using cornstarch)
2 tablespoons fresh parsley, chopped (for garnish)
Instructions
1. Season the chicken thighs with salt and pepper.
2. Heat olive oil in a skillet over medium-high heat and sear the chicken for about 3-4 minutes per side, until golden.
3. Transfer the seared chicken to the slow cooker.
4. In the same skillet, add sliced mushrooms and garlic. Sauté until mushrooms release their moisture and begin to brown, about 5 minutes.
5. Pour in Marsala wine to deglaze the pan, scraping up any browned bits.
6. Add the mushroom and wine mixture to the slow cooker with the chicken.
7. Pour in chicken broth. Cover and cook on low for 5–6 hours or high for 3–4 hours.
8. In the final 30 minutes of cooking, stir in heavy cream.
9. If a thicker sauce is desired, whisk cornstarch and water together and stir into the slow cooker. Let cook an additional 20–30 minutes.
10. Garnish with chopped fresh parsley before serving. Enjoy over mashed potatoes, pasta, or rice.
