Description

A hearty and flavorful breakfast made in one skillet, combining crispy potatoes, smoky sausage, sweet peppers, and eggs. Ideal for brunch or meal prepping, this dish delivers golden texture and savory goodness in every bite.


Ingredients

3 medium russet potatoes, peeled and cubed

1 smoked sausage or kielbasa, sliced

1 red bell pepper, diced

1 green bell pepper, diced

1 yellow onion, diced

2 garlic cloves, minced

3 large eggs

2 tablespoons olive oil or butter salt and black pepper, to taste

2 tablespoons chopped green onions or chives, for garnish


Instructions

  1. 1. Peel and cube the potatoes into 1/2-inch pieces.
  2. Dice the onion and peppers, and slice the sausage.
  3. Boil potatoes in salted water for 5 minutes.
  4. Drain and pat them dry. Heat 1 tablespoon oil in a cast iron skillet over medium-high heat.
  5. Add sausage and cook until browned. Add onions and peppers.
  6. Cook until softened and slightly caramelized. Push everything to one side.
  7. Add remaining oil and then the potatoes. Let sear undisturbed for 3–4 minutes.
  8. Stir and cook until golden and crispy.
  9. Create 2–3 wells in the hash and crack an egg into each.
  10. Cover with lid and cook until egg whites are set but yolks are runny (about 5 minutes).
  11. Garnish with chopped green onions or chives. Serve warm.

Notes

Pat your potatoes completely dry after boiling to ensure a crisp finish.

Don’t overcrowd the skillet—cook in batches if needed to prevent sogginess.

For firmer yolks, cover the skillet and cook slightly longer.
