Ingredients
1 cup dried red beans (or 2 cans, drained and rinsed)
1 cup white rice
12 oz smoked sausage, sliced
1 medium onion, diced
3 cloves garlic, minced
2 stalks celery, chopped
1 bell pepper, chopped
4 cups chicken broth
1 tablespoon Cajun seasoning
2 bay leaves
Salt to taste
Black pepper to taste
2 tablespoons fresh parsley, chopped
Instructions
1. Dice the onion, celery, and bell pepper, slice the sausage, and mince the garlic.
2. In a large pot, cook the sausage over medium heat until browned.
3. Add onion, celery, and bell pepper, and sauté until softened. Stir in garlic.
4. Add red beans, chicken broth, Cajun seasoning, bay leaves, salt, and pepper.
5. Bring to a boil, then reduce heat and simmer for 45–60 minutes until beans are tender.
6. Cook rice separately according to package instructions.
7. Remove bay leaves, serve beans over rice, and garnish with parsley.
