Description

Simple Pecan Pie Bars deliver all the rich, gooey, nutty goodness of a classic pecan pie—but in portable, fuss-free bar form. A buttery shortbread base supports a decadent pecan filling that slices beautifully and tastes even better the next day. Perfect for holidays, dessert tables, or anytime you crave nostalgic comfort with a crispy-chewy bite.


Ingredients

1 cup unsalted butter, softened

2 cups all-purpose flour

1/2 cup granulated sugar

1/4 teaspoon salt

4 large eggs

1 1/2 cups light corn syrup

1 cup brown sugar, packed

2 teaspoons vanilla extract

2 cups chopped pecans


Instructions

1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper and set aside.

2. In a bowl, cream together softened butter and granulated sugar until light and fluffy.

3. Mix in flour and salt until the mixture resembles coarse crumbs.

4. Press the crust mixture evenly into the bottom of the pan. Bake for 18–20 minutes until lightly golden.

5. While the crust bakes, whisk together eggs, light corn syrup, brown sugar, vanilla extract, and a pinch of salt in a large bowl until fully combined.

6. Fold in the chopped pecans.

7. Remove the crust from the oven and pour the pecan filling over the hot crust. Spread evenly.

8. Return to the oven and bake for 30–35 minutes or until the filling is golden and just set in the center.

9. Allow bars to cool completely in the pan.

10. Use parchment paper overhang to lift and slice into bars. Serve as-is or with a scoop of vanilla ice cream.

Notes

Toasting the pecans before mixing into the filling enhances their flavor and adds more crunch.

Be sure to pour the filling over a hot crust to help prevent sogginess.

For clean slices, cool completely and use a sharp knife, wiping between cuts.
