Ingredients

2.5 lbs Yukon gold or russet potatoes

1.5 cups sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

1 cup heavy cream or half-and-half

3 tablespoons butter, melted

1 teaspoon salt

0.5 teaspoon black pepper

1 teaspoon garlic powder or 2 cloves fresh garlic, minced

2 tablespoons chopped parsley (optional, for garnish)


Instructions

1. Wash, peel (if desired), and dice the potatoes into 1-inch cubes.

2. Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish.

3. In a large bowl, combine the shredded cheddar, mozzarella, cream, melted butter, garlic, salt, and pepper. Mix until combined.

4. Add the diced potatoes and gently toss to coat evenly.

5. Transfer the mixture to the prepared baking dish and spread it out evenly.

6. Cover with foil and bake for 35 minutes.

7. Remove foil and bake another 20–25 minutes until golden brown and bubbly.

8. Let rest for 5 minutes before serving. Garnish with parsley if desired.

Notes

For a crispier top, broil for the last 2-3 minutes—but keep an eye on it.

You can prep this dish a day ahead; just add a few minutes to baking time if chilled.

Swap in pepper jack or gouda cheese for a fun flavor twist.
