A fresh and colorful Tex-Mex inspired meal featuring juicy shrimp, rice, black beans, corn, fresh salsa, and creamy guacamole. Perfect for meal prep or a quick weeknight dinner.
Ingredients
1 lb large raw shrimp, peeled and deveined
1 tbsp olive oil
1 tsp chili powder
1/2 tsp cumin
1/2 tsp garlic powder
Salt to taste
Juice of 1 lime
2 cups cooked white rice
1 can black beans, rinsed and drained
1 cup corn (fresh, frozen, or canned)
1 cup diced tomatoes or pico de gallo
1 cup guacamole or mashed avocado
Fresh cilantro, chopped (optional)
Lime wedges for serving
Instructions
- Cook white rice according to package instructions. Add lime juice and cilantro if desired.
- In a bowl, toss shrimp with olive oil, chili powder, cumin, garlic powder, salt, and lime juice.
- Heat a skillet over medium-high heat and cook shrimp for 2-3 minutes per side until pink and slightly charred.
- (Optional) Sauté corn in a skillet until lightly browned for extra flavor.
- Prepare toppings: rinse black beans, dice tomatoes or make pico, and mash avocado or prepare guacamole.
- Assemble bowls: Start with rice, then add shrimp, beans, corn, tomatoes, and guacamole.
- Garnish with cilantro and serve with lime wedges.
