Description

A fresh and colorful Tex-Mex inspired meal featuring juicy shrimp, rice, black beans, corn, fresh salsa, and creamy guacamole. Perfect for meal prep or a quick weeknight dinner.


Ingredients

1 lb large raw shrimp, peeled and deveined

1 tbsp olive oil

1 tsp chili powder

1/2 tsp cumin

1/2 tsp garlic powder

Salt to taste

Juice of 1 lime

2 cups cooked white rice

1 can black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned)

1 cup diced tomatoes or pico de gallo

1 cup guacamole or mashed avocado

Fresh cilantro, chopped (optional)

Lime wedges for serving


Instructions

  1. Cook white rice according to package instructions. Add lime juice and cilantro if desired.
  2. In a bowl, toss shrimp with olive oil, chili powder, cumin, garlic powder, salt, and lime juice.
  3. Heat a skillet over medium-high heat and cook shrimp for 2-3 minutes per side until pink and slightly charred.
  4. (Optional) Sauté corn in a skillet until lightly browned for extra flavor.
  5. Prepare toppings: rinse black beans, dice tomatoes or make pico, and mash avocado or prepare guacamole.
  6. Assemble bowls: Start with rice, then add shrimp, beans, corn, tomatoes, and guacamole.
  7. Garnish with cilantro and serve with lime wedges.
