Ingredients

1 pound fresh lump crab meat

4 tablespoons unsalted butter

1/2 cup finely diced onion

1/2 cup finely diced celery

1/4 cup all-purpose flour

2 cups seafood stock or fish broth

2 cups whole milk

1 cup heavy cream

1/4 cup dry sherry (plus more for serving, optional)

1 teaspoon Old Bay seasoning

1/8 teaspoon cayenne pepper

Salt and black pepper, to taste

Fresh chopped parsley, for garnish


Instructions

  1. In a large pot, melt butter over medium heat. Add onion and celery and sauté until softened, about 5 minutes.
  2. Stir in flour and cook for 2 to 3 minutes, stirring constantly to form a light roux.
  3. Slowly whisk in seafood stock, ensuring no lumps remain. Add milk and cream, stirring to combine.
  4. Season with Old Bay, cayenne, salt, and pepper. Bring to a gentle simmer and cook for 10 to 15 minutes.
  5. Gently stir in crab meat and dry sherry. Simmer an additional 5 minutes until heated through.
  6. Serve hot, garnished with parsley and a drizzle of sherry or dash of paprika if desired.
