Salt and pepper to taste
1 cup shredded cheddar cheese
1/2 cup Parmesan cheese
1 cup breadcrumbs (panko for extra crunch)
2 tablespoons melted butter (for breadcrumbs)

Instructions
- In a large saucepan, melt 2 tablespoons of butter over medium heat. Stir in the flour and cook for about 1-2 minutes until lightly golden.
