Ingredients

2 cups corn (fresh, canned, or frozen, drained if needed)

1 cup heavy cream

1/2 cup milk

2 tablespoons butter

1/4 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper to taste

1 cup shredded cheddar cheese

1/2 cup Parmesan cheese

1 cup breadcrumbs (panko for extra crunch)

2 tablespoons melted butter (for breadcrumbs)

Fresh thyme or parsley for garnish (optional)


Instructions

  1. In a large saucepan, melt 2 tablespoons of butter over medium heat. Stir in the flour and cook for about 1-2 minutes until lightly golden.
  2. Gradually whisk in the heavy cream and milk, stirring constantly until the mixture thickens (about 3-4 minutes). Season with garlic powder, onion powder, paprika, salt, and pepper to taste.
  3. Stir in the shredded cheddar cheese and Parmesan cheese until melted and smooth. Add the corn and mix well.
  4. Preheat the oven to 375°F (190°C). Grease a baking dish with butter or cooking spray. Pour the corn mixture into the prepared dish and spread evenly.
  5. In a small bowl, mix breadcrumbs with 2 tablespoons of melted butter and sprinkle over the casserole.
  6. Bake for 25-30 minutes or until golden and bubbly. For a crispier top, broil for the last 1-2 minutes.
