Description

This Savory Garlic Chicken and Gnocchi Skillet is the ultimate comfort food made in just one pan. Tender, seared chicken and soft potato gnocchi are smothered in a creamy garlic parmesan sauce with spinach and optional sun-dried tomatoes. It’s rich, flavorful, and perfect for a cozy dinner that feels gourmet but is weeknight-easy.


Ingredients

1.5 lbs boneless skinless chicken breasts or thighs

16 oz potato gnocchi

4 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 cup fresh spinach

1⁄3 cup sun-dried tomatoes (optional)

1⁄2 cup grated Parmesan cheese

1 tablespoon olive oil

2 tablespoons butter (divided)

1 teaspoon Italian seasoning

1⁄2 teaspoon salt

1⁄4 teaspoon black pepper

Chopped parsley for garnish (optional)


Instructions

1. Season the chicken with salt, pepper, and Italian seasoning.

2. In a large nonstick or cast iron skillet, heat 1 tablespoon olive oil and 1 tablespoon butter over medium heat.

3. Sear the chicken for about 4–5 minutes on each side until golden and cooked through. Remove from the skillet and set aside.

4. Reduce heat slightly and add the remaining 1 tablespoon butter. Sauté the minced garlic for 1 minute until fragrant.

5. Pour in chicken broth, scraping the skillet to release any browned bits.

6. Add gnocchi and let it simmer uncovered for 5–7 minutes, stirring occasionally, until soft.

7. Stir in heavy cream, Parmesan cheese, and sun-dried tomatoes if using. Simmer on low until sauce thickens.

8. Add spinach and stir until wilted. Return chicken to the pan and heat through.

9. Garnish with parsley or extra cheese and serve hot.

Notes

For extra flavor, use freshly grated Parmesan instead of pre-shredded cheese.

Don’t overcook the gnocchi — it should be soft but still hold its shape.

If the sauce thickens too much during reheating, add a splash of broth or cream to bring it back.
