Ingredients

8 breakfast sausage links (pre-cooked or cooked in advance)

8 slices of white sandwich bread, crusts removed

2 large eggs

1/4 cup milk

1/2 teaspoon ground cinnamon

1/2 teaspoon vanilla extract

1 tablespoon butter (for frying)

Maple syrup and berries, for serving (optional)


Instructions

  1. Prepare sausages and bread: Warm sausages if needed. Trim crusts off bread slices and flatten each slice with a rolling pin.
  2. Roll: Place a sausage on one end of a slice of bread and roll it up tightly. Repeat with remaining slices.
  3. Make custard mix: In a shallow bowl, whisk together eggs, milk, cinnamon, and vanilla.
  4. Dip roll-ups: Dip each bread roll in the custard mix, coating all sides.
  5. Cook: In a skillet over medium heat, melt butter. Place roll-ups seam-side down and cook until golden on all sides, turning frequently.
