Ingredients

2 cups ground breakfast sausage

3 cups frozen hash browns

8 large eggs

1 ½ cups milk

1 ½ cups shredded cheddar cheese

½ cup diced red bell pepper

½ cup diced green bell pepper

¼ cup chopped green onions

½ teaspoon salt

¼ teaspoon black pepper

¼ teaspoon garlic powder (optional)


Instructions

1. Preheat oven to 375°F (190°C).

2. In a large skillet, cook the ground sausage over medium heat until browned and fully cooked. Drain excess fat and set aside.

3. In the same skillet, sauté the diced bell peppers and green onions until softened.

4. Grease a 9×13-inch baking dish. Spread the frozen hash browns evenly on the bottom.

5. Layer the cooked sausage over the hash browns, followed by the sautéed vegetables.

6. In a mixing bowl, whisk together the eggs, milk, salt, pepper, and garlic powder (if using) until well combined.

7. Pour the egg mixture evenly over the layers in the baking dish.

8. Sprinkle the shredded cheddar cheese over the top.

9. Bake uncovered for 40–45 minutes, or until the eggs are set and the top is golden brown.

10. Let cool for 5–10 minutes before slicing and serving.

Notes

Make ahead: You can assemble this casserole the night before, cover, and refrigerate overnight. Bake in the morning as directed.
