Ingredients
1 tablespoon olive oil
14 oz smoked sausage, sliced
1 medium onion, chopped
2 carrots, chopped
2 celery stalks, chopped
3 garlic cloves, minced
4 cups chicken broth
1 (15 oz) can white beans, drained and rinsed
1 (15 oz) can kidney beans, drained and rinsed
1 (15 oz) can pinto beans, drained and rinsed
Salt and pepper to taste
2 tablespoons fresh parsley, chopped
Instructions
- Heat olive oil in a large pot over medium heat. Add sausage slices and sauté until browned, about 5-7 minutes.
- Add onion, carrots, and celery. Cook for 5 minutes until slightly softened.
- Stir in minced garlic and cook for 1 more minute.
- Deglaze the pot with a splash of chicken broth, scraping up browned bits.
- Add the drained beans and remaining chicken broth. Stir well.
- Bring to a boil, then reduce heat and simmer for 20-25 minutes.
- Season with salt and pepper. Stir in fresh parsley just before serving.
- Serve hot with crusty bread or over rice.
