Description

Sausage Bean Soup is a hearty, flavorful one-pot meal filled with smoky sausage, creamy white beans, and aromatic vegetables. This cozy classic is perfect for chilly nights or easy meal prep, and it’s packed with rich, comforting flavor in every bite.


Ingredients

1 tablespoon olive oil

14 ounces smoked sausage, sliced

1 medium yellow onion, chopped

2 carrots, peeled and diced

2 celery stalks, diced

3 cloves garlic, minced

4 cups chicken broth

2 cans (15 ounces each) white beans, drained and rinsed

1 teaspoon dried thyme or Italian seasoning

1 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

2 tablespoons fresh parsley, chopped (optional, for garnish)


Instructions

1. Heat olive oil in a Dutch oven over medium heat. Add the sliced smoked sausage and cook until browned on both sides. Remove the sausage and set aside.

2. In the same pot, add the chopped onion, carrots, and celery. Sauté for 6-8 minutes until softened. Add the minced garlic and cook for 1-2 minutes.

3. Pour in the chicken broth, scraping the bottom of the pot to deglaze. Add back the sausage, beans, thyme, salt, and pepper. Bring to a boil.

4. Reduce heat to low and cover. Let simmer for 25-30 minutes to allow flavors to meld.

5. Taste and adjust seasoning. Stir in fresh parsley before serving if desired. Serve hot with crusty bread or over rice.

Notes

For thicker soup, mash some of the beans and stir them back into the pot before serving.

Smoked sausage like kielbasa or andouille adds a great depth of flavor—choose your favorite!

This soup freezes well—store in airtight containers for up to 3 months.
