Description

A nourishing and vibrant dinner plate featuring juicy pan-seared salmon, crisp-tender broccoli, fluffy white rice, and cool cucumber slices. This wholesome, simple dish is perfect for a balanced meal that’s as satisfying as it is beautiful.


Ingredients

2 salmon fillets (about 6 oz each)

2 cups broccoli florets

1 cup white rice (uncooked)

1 cucumber, sliced

1 tablespoon olive oil (plus more if needed)

Salt, to taste

Black pepper, to taste

Fresh lemon juice (optional)


Instructions

  1. Rinse the rice until water runs clear. Cook according to package instructions. Set aside.
  2. Wash and chop broccoli into florets. Slice cucumber into thin rounds.
  3. Pat salmon fillets dry. Season both sides with salt and pepper.
  4. Heat olive oil in a skillet over medium-high heat. Sear salmon skin-side down for 4–5 minutes. Flip and cook another 3–4 minutes until golden and cooked through.
  5. In the same skillet, add a little more oil if needed. Saute broccoli for 4–5 minutes until bright green and just tender. Season with salt and pepper.
  6. Assemble the plate with rice, broccoli, cucumber, and salmon. Optional: drizzle with lemon juice before serving.
