Ingredients

1 ½ cups all-purpose flour

1 teaspoon baking soda

½ teaspoon salt

1 teaspoon ground cinnamon

½ teaspoon ground cloves

¼ teaspoon ground nutmeg

½ cup unsalted butter, softened

½ cup granulated sugar

½ cup molasses

1 large egg

1 teaspoon vanilla extract

½ cup boiling water

½ cup powdered sugar

1 tablespoon milk


Instructions

1. In a large mixing bowl, cream together the unsalted butter and granulated sugar until light and fluffy.

2. Blend in the molasses, egg, and vanilla extract until smooth and combined.

3. In a separate bowl, whisk together flour, baking soda, salt, cinnamon, cloves, and nutmeg.

4. Gradually add the dry ingredients to the wet mixture, alternating with the boiling water. Mix until just combined.

5. Preheat oven to 350°F (175°C) and grease or line a mini muffin tin.

6. Scoop batter into muffin wells, filling each about ¾ full.

7. Bake for 10–12 minutes, or until tops spring back when touched.

8. Let cool slightly. Add a small dollop of glaze (powdered sugar and milk mixed until smooth) to the center of each muffin.

9. Cool completely on a wire rack before serving.

Notes

Use regular unsulphured molasses, not blackstrap, for best flavor.

For even muffins, use a small cookie scoop to portion the batter.

Let muffins cool fully before glazing to avoid melting the topping.
