Ingredients
2 pounds Yukon Gold potatoes, halved or quartered
2 tablespoons olive oil
2 cloves garlic, minced (or 1 teaspoon garlic powder)
1 tablespoon fresh rosemary or thyme (or 1 teaspoon dried)
1 teaspoon salt
1/2 teaspoon black pepper
Optional: 1/2 teaspoon smoked paprika or onion powder
Fresh chopped parsley for garnish
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Wash and dry the potatoes. Cut them into halves or quarters.
- In a large bowl, toss potatoes with olive oil, garlic, herbs, salt, pepper, and optional spices.
- Arrange potatoes cut-side down on the baking sheet in a single layer.
- Roast for 25-30 minutes, or until golden and crispy on the outside.
- Remove from oven and sprinkle with fresh parsley before serving.
