Ingredients
2 large sweet potatoes
2 tablespoons olive oil or melted butter
2 tablespoons honey
1/3 cup crumbled feta cheese
1 tablespoon chopped fresh parsley or mint
Salt and pepper to taste
Instructions
1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. Wash, peel, and slice the sweet potatoes into 1/2-inch rounds.
3. Arrange the rounds in a single layer on the baking sheet.
4. Drizzle with olive oil or butter and season with salt and pepper. Flip to coat both sides.
5. Roast for 20 minutes, flip each round, and roast an additional 10-15 minutes until edges are browned.
6. Remove from oven and immediately drizzle with honey.
7. Sprinkle crumbled feta over the rounds.
8. Garnish with chopped parsley or mint and serve warm.
Notes
For crispier edges, make sure the rounds aren’t touching on the baking sheet.
You can prepare the rounds ahead of time and add toppings just before serving.
Maple syrup can be used instead of honey for a deeper, more earthy sweetness.
