Description

Ingredients

1 cup fresh strawberries, halved or quartered

1 tbsp honey

1 cup ricotta cheese

4 slices brioche or challah bread

1 tbsp olive oil or melted butter (for brushing)

Fresh mint leaves, for garnish

Pinch of salt

Freshly cracked black pepper (optional)


Instructions

  1. Roast the Strawberries: Preheat oven to 375°F (190°C). Place strawberries on a baking sheet, drizzle with honey and a pinch of salt. Roast for 20–25 minutes until soft and syrupy.
  2. Whip the Ricotta: In a bowl, whip ricotta using a hand mixer or whisk until light and fluffy.
  3. Toast the Bread: Brush bread slices with olive oil or melted butter. Toast until golden and crisp.
  4. Assemble: Spread whipped ricotta on toast. Top with roasted strawberries and drizzle with juices. Garnish with mint and a sprinkle of black pepper if using.
  5. Serve: Enjoy immediately while warm and crisp.
