A luxurious yet simple breakfast toast layered with whipped ricotta and syrupy roasted strawberries, finished with fresh mint and optional black pepper for a unique twist. Perfect for weekend mornings or hosting brunch.
Ingredients
1 cup fresh strawberries, halved or quartered
1 tbsp honey
1 cup ricotta cheese
4 slices brioche or challah bread
1 tbsp olive oil or melted butter (for brushing)
Fresh mint leaves, for garnish
Pinch of salt
Freshly cracked black pepper (optional)
Instructions
- Roast the Strawberries: Preheat oven to 375°F (190°C). Place strawberries on a baking sheet, drizzle with honey and a pinch of salt. Roast for 20–25 minutes until soft and syrupy.
 - Whip the Ricotta: In a bowl, whip ricotta using a hand mixer or whisk until light and fluffy.
 - Toast the Bread: Brush bread slices with olive oil or melted butter. Toast until golden and crisp.
 - Assemble: Spread whipped ricotta on toast. Top with roasted strawberries and drizzle with juices. Garnish with mint and a sprinkle of black pepper if using.
 - Serve: Enjoy immediately while warm and crisp.
