Ingredients

6 bone-in, skin-on chicken thighs

4 cloves garlic, minced

3 tablespoons olive oil

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme leaves

1 teaspoon salt

½ teaspoon black pepper

1 lemon, optional (for serving)


Instructions

1. Preheat oven to 400°F (200°C). Pat chicken thighs dry with paper towels and season both sides with salt and pepper.

2. In a bowl, mix olive oil, minced garlic, chopped rosemary, and thyme into a paste.

3. Heat a cast iron skillet over medium-high heat. Sear chicken thighs skin-side down for 4–5 minutes until golden. Flip and sear the other side for 2–3 minutes.

4. Remove the skillet from heat. Brush the garlic-herb mixture generously over each thigh.

5. Transfer skillet to the oven. Roast for 20–25 minutes or until internal temperature reaches 165°F.

6. Let rest for 5 minutes before serving. Squeeze lemon juice over top, if desired.

Notes

Patting the chicken dry before searing is key to crispy skin.

Don’t skip the resting time—it helps retain juiciness.

For extra flavor, marinate the chicken in the herb mixture for a few hours before cooking.
