Description

This one-skillet Rice and Beans recipe brings together smoky sausage, hearty pinto beans, and fluffy rice for a flavorful comfort meal that’s easy to make, budget-friendly, and perfect for leftovers or meal prep.


Ingredients

1 tablespoon olive oil or butter

1 medium onion, diced

1 bell pepper, diced (optional)

2 cloves garlic, minced

1 cup smoked sausage, chopped

2 cups cooked white rice

1 can (15 oz) pinto beans, drained and rinsed

1 teaspoon salt

1/2 teaspoon black pepper

1/4 cup fresh cilantro or parsley, chopped


Instructions

1. Heat the olive oil or butter in a large skillet over medium heat.

2. Add the diced onion (and bell pepper if using), sauté for 4–5 minutes until softened.

3. Add chopped smoked sausage and cook until browned and slightly crisp.

4. Stir in the minced garlic, salt, and pepper. Sauté for 1 minute.

5. Add the cooked rice and drained pinto beans. Gently fold to combine.

6. Let simmer on low heat for 5–7 minutes to allow flavors to meld.

7. Sprinkle with chopped cilantro or parsley and serve warm.

Notes

Pre-cook your rice ahead of time for quicker prep.

Rinse canned beans to reduce sodium and improve flavor.

For added spice, toss in red pepper flakes or diced jalapeños.
