Description

Ingredients
2 large cucumbers
3 tablespoons peanut butter
2 tablespoons rice vinegar
1 tablespoon soy sauce
1 clove garlic, minced
1 teaspoon sesame oil
1 teaspoon honey or maple syrup
0.5 teaspoon red pepper flakes
2 tablespoons crushed peanuts
2 tablespoons fresh cilantro (optional)
Instructions
1. Wash and thinly slice the cucumbers using a sharp knife or mandoline.
2. In a small bowl, whisk together peanut butter, rice vinegar, soy sauce, minced garlic, sesame oil, honey or maple syrup, and red pepper flakes until smooth.
3. Pour the dressing over the cucumber slices and toss gently to coat.
4. Top with crushed peanuts and fresh cilantro if using. Add extra red pepper flakes if desired.
5. Chill for 10–15 minutes before serving for best flavor.
Notes
Slice cucumbers slightly thicker for extra crunch.
Adjust red pepper flakes to taste for desired spice level.
Prepare dressing ahead, but combine with cucumbers just before serving to keep them crisp.
