Ingredients

1 tablespoon olive oil

1 yellow onion, diced

2 garlic cloves, minced

2 carrots, diced

2 celery stalks, diced

1 (14.5-ounce) can diced tomatoes

2 tablespoons tomato paste

1 teaspoon Italian seasoning

Salt and pepper, to taste

4 cups vegetable or chicken broth

1 (9-ounce) package cheese ravioli (fresh or refrigerated)

Fresh parsley, chopped (for garnish)


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook for 5–6 minutes until softened.
  3. Stir in garlic and cook for 1–2 minutes until fragrant.
  4. Mix in tomato paste and cook for 1 minute.
  5. Add diced tomatoes, Italian seasoning, salt, and pepper. Stir well.
  6. Pour in the broth and bring to a gentle boil. Reduce heat and simmer for 10–15 minutes.
  7. Add ravioli and cook according to package instructions (usually 4–6 minutes).
  8. Adjust seasoning if needed. Serve hot, garnished with fresh parsley.
