Ingredients
2 chicken breasts
12 oz penne pasta
1 cup heavy cream
1 cup grated Parmesan cheese
2 jalapeños, sliced
3 cloves garlic, minced
3 tbsp butter
2 tsp Cajun seasoning
Salt and pepper to taste
Instructions
- Slice chicken breasts into strips and season with Cajun seasoning, salt, and pepper.
- In a large skillet, melt butter over medium-high heat and cook chicken until golden and cooked through. Set aside.
- Cook penne pasta in salted boiling water until al dente. Drain, reserving 1/2 cup pasta water.
- In the same skillet, melt remaining butter. Sauté garlic and jalapeños for 1-2 minutes.
- Add heavy cream and bring to a simmer. Stir in Parmesan cheese until smooth.
- Return chicken to skillet; toss to coat. Add pasta and combine. Use reserved pasta water if needed for consistency.
- Adjust seasoning as desired. Serve hot with extra Parmesan or herbs.
