Ingredients
1 lb ground beef
2 medium zucchini, sliced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 medium onion, diced
3 cloves garlic, minced
2 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
2 tsp Italian seasoning
2 tbsp chopped fresh parsley
Instructions
1. Heat olive oil in a large skillet over medium heat. Add diced onion and cook for 2–3 minutes until softened.
2. Stir in minced garlic and cook for an additional minute until fragrant.
3. Move the onions to one side of the skillet. Add the ground beef and break it apart using a spatula. Cook until browned and fully cooked through.
4. Season the beef with salt, pepper, and Italian seasoning. Stir to combine.
5. Add the sliced zucchini and bell peppers. Stir everything together and cook for 6–8 minutes until the vegetables are tender but still crisp.
6. Simmer the mixture for an additional 2 minutes, allowing the flavors to meld.
7. Turn off the heat and stir in chopped fresh parsley. Serve immediately, optionally with lemon juice or over a bed of rice, couscous, or in pita.
Notes
Use lean ground beef (90/10 or 93/7) to keep the dish light and less greasy.
Don’t overcook the vegetables—keep them slightly crisp for texture and freshness.
Add a squeeze of fresh lemon before serving to brighten up the flavors.
