Description

These Quick Jumbo Dinner Rolls are fluffy, buttery, and ready in under an hour. Ingredients

4 cups all-purpose flour

1 cup warm milk

1/4 cup granulated sugar

2 1/4 teaspoons instant yeast

1/4 cup unsalted butter, melted

2 large eggs

1 teaspoon salt

2 tablespoons melted butter (for brushing)


Instructions

1. Warm the milk to about 110°F and pour it into the bowl of a stand mixer. Add the sugar, melted butter, and eggs. Mix on low until combined.

2. Add the yeast, salt, and half of the flour. Mix using the dough hook until combined, then gradually add remaining flour until dough forms and pulls from the sides.

3. Knead with the dough hook for 5–7 minutes, or until smooth and elastic. Cover and let rest for 10 minutes.

4. Divide dough into 12 equal portions. Shape into balls and arrange in a greased 9×13 baking dish.

5. Cover loosely and let rise for 20–25 minutes in a warm place until puffy.

6. Preheat oven to 375°F. Brush rolls with egg wash or melted butter.

7. Bake for 18–22 minutes, until golden brown.

8. Brush again with melted butter right after baking for a glossy, soft finish.

Notes

Use a kitchen scale to make sure each dough ball is the same size for even baking.

For a chewier texture, substitute bread flour for all-purpose.

Brushing with butter after baking keeps the rolls extra soft and flavorful.
