Description

This Mediterranean Turkey Meatball Bowl is a bright, refreshing, and nourishing meal. Featuring lean turkey meatballs, crisp vegetables, creamy tzatziki, and fresh herbs, it’s perfect for meal prep or quick weeknight dinners.


Ingredients

1 lb ground turkey

1/3 cup breadcrumbs

1 egg

2 cloves garlic, minced

1/4 cup onion, grated or finely chopped

2 tablespoons fresh parsley, chopped

1/2 teaspoon ground cumin

1/2 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup cherry tomatoes, halved

1 cup cucumber, diced

2 cups spinach or mixed greens

1 lemon, zested and sliced

1 cup Greek yogurt

1/4 cup cucumber, grated (for tzatziki)

1 clove garlic, minced (for tzatziki)

1 tablespoon fresh dill, chopped

1 tablespoon fresh mint, chopped

1 tablespoon lemon juice

1 tablespoon olive oil

Salt and pepper to taste


Instructions

1. In a bowl, combine ground turkey, breadcrumbs, egg, grated onion, garlic, parsley, cumin, oregano, salt, and pepper. Mix gently until combined.

2. Form into 1-tablespoon-sized meatballs. Cook in a skillet with olive oil over medium heat, turning until browned and cooked through (about 10–12 minutes), or bake at 400°F for 18–20 minutes.

3. Make the tzatziki: Combine Greek yogurt, grated cucumber, garlic, dill, mint, lemon juice, olive oil, and salt and pepper. Chill until ready to serve.

4. Prep bowl components: Chop cucumber, halve cherry tomatoes, and lay spinach in serving bowls.

5. Assemble bowls with greens, veggies, meatballs, a spoonful of tzatziki, lemon slices, and extra parsley if desired.

Notes

Don’t overmix the meatball mixture—just combine until incorporated for the best texture.

Chill tzatziki for at least 15 minutes to let the flavors develop.

Store components separately if meal prepping to keep veggies crisp and meatballs juicy.
