This Quick Angel Hair Pasta Salad with Fresh Veggies & Herbs is a light, zesty dish perfect for warm-weather meals, potlucks, or quick weeknight dinners. Delicate pasta mingles with crunchy vegetables and fresh herbs, all tied together with a lemony olive oil dressing.
Ingredients
200 g angel hair pasta
1 cup cherry tomatoes, halved
1 medium carrot, sliced thin
1 celery stalk, sliced thin
1/3 cup black olives, sliced
2 tablespoons fresh parsley, chopped
2 tablespoons fresh basil, chopped
3 tablespoons olive oil
2 tablespoons lemon juice
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
- 1. Bring a large pot of salted water to a boil.
- Cook the angel hair pasta until al dente, then drain and rinse under cold water.
- While pasta cools, halve cherry tomatoes, slice carrots and celery, and slice olives.
- Chop parsley and basil. In a small bowl, whisk olive oil, lemon juice, salt, and pepper.
- Taste and adjust seasoning. In a large bowl, toss cooled pasta with veggies and herbs.
- Drizzle dressing over and toss gently.
- Chill for 20 minutes before serving.
- Toss lightly before plating and garnish with extra herbs or lemon.
Notes
Rinse pasta well to prevent sticking. Make ahead for better flavor—up to 1 day in advance.
Add grilled chicken or chickpeas for extra protein.
