Description

This Quick Angel Hair Pasta Salad with Fresh Veggies & Herbs is a light, zesty dish perfect for warm-weather meals, potlucks, or quick weeknight dinners. Delicate pasta mingles with crunchy vegetables and fresh herbs, all tied together with a lemony olive oil dressing.


Ingredients

200 g angel hair pasta

1 cup cherry tomatoes, halved

1 medium carrot, sliced thin

1 celery stalk, sliced thin

1/3 cup black olives, sliced

2 tablespoons fresh parsley, chopped

2 tablespoons fresh basil, chopped

3 tablespoons olive oil

2 tablespoons lemon juice

1/2 teaspoon salt

1/4 teaspoon black pepper


Instructions

  1. 1. Bring a large pot of salted water to a boil.
  2. Cook the angel hair pasta until al dente, then drain and rinse under cold water.
  3. While pasta cools, halve cherry tomatoes, slice carrots and celery, and slice olives.
  4. Chop parsley and basil. In a small bowl, whisk olive oil, lemon juice, salt, and pepper.
  5. Taste and adjust seasoning. In a large bowl, toss cooled pasta with veggies and herbs.
  6. Drizzle dressing over and toss gently.
  7. Chill for 20 minutes before serving.
  8. Toss lightly before plating and garnish with extra herbs or lemon.

Notes

Rinse pasta well to prevent sticking. Make ahead for better flavor—up to 1 day in advance.

Add grilled chicken or chickpeas for extra protein.
