Description

Quick and Easy Forgotten Chicken is the perfect weeknight dinner that practically cooks itself. Juicy chicken thighs rest on a bed of creamy, flavorful rice that absorbs every drop of deliciousness. It’s made with pantry staples, requires minimal prep, and comes out of the oven golden and comforting.


Ingredients

6 boneless skinless chicken thighs

1 cup long grain white rice

1 can (10.5 oz) cream of chicken soup

1 can (10.5 oz) cream of celery soup

1 ½ cups water or chicken broth

1 packet Lipton onion soup mix

½ teaspoon salt

½ teaspoon black pepper


Instructions

1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.

2. In a medium bowl, mix together the cream of chicken soup, cream of celery soup, and water or chicken broth until smooth.

3. Stir in the uncooked rice, then pour the mixture into the baking dish.

4. Place chicken thighs on top of the rice mixture and press them in slightly.

5. Sprinkle onion soup mix evenly over the chicken. Season with salt and pepper.

6. Cover the dish tightly with foil and bake for 1 hour and 15 minutes.

7. Remove foil and bake for another 10–15 minutes until the top is lightly golden and bubbling.

8. Let rest for 5 minutes before serving.

Notes

Let the casserole rest before serving to help the sauce thicken and flavors meld.

If using chicken breasts, check doneness earlier to avoid drying them out.

You can swap cream of celery with cream of mushroom for an earthier taste.
